A vers\u00e3o moderna devolve essa alma \u00e0 caneca \u2014 cremosa, aquecida por dentro e por fora.<\/p>\n<h2>A hist\u00f3ria em um par\u00e1grafo<\/h2>\n<p>Astecas e maias consumiam cacau mo\u00eddo com \u00e1gua, pimenta e ervas \u2014 sem a\u00e7\u00facar, que n\u00e3o existia na Am\u00e9rica. Os espanh\u00f3is levaram a bebida pra Europa, trocaram a pimenta por a\u00e7\u00facar, e o chocolate virou o doce que conhecemos. A receita picante nunca morreu no M\u00e9xico \u2014 e o inverno brasileiro agradece o resgate.<\/p>\n<h2>Ingredientes (2 canecas generosas)<\/h2>\n<ul>\n<li>500 ml de leite integral (ou bebida vegetal cremosa)<\/li>\n<li>100 g de chocolate meio amargo 50-70% picado (barra, n\u00e3o achocolatado \u2014 aqui n\u00e3o tem atalho)<\/li>\n<li>1\/2 <a href=\"https:\/\/pimentoteca.com.br\/blog\/experimente\/tudo-o-que-voce-precisa-saber-sobre-a-pimenta-dedo-de-moca\/\">dedo-de-mo\u00e7a<\/a> aberta e sem sementes (ou 1\/4 de colher de ch\u00e1 de caiena em p\u00f3)<\/li>\n<li>1 pau de canela + 1 pitada de noz-moscada<\/li>\n<li>1 colher (sopa) de a\u00e7\u00facar mascavo (a gosto)<\/li>\n<li>1 pitada de sal (real\u00e7a o cacau \u2014 confie)<\/li>\n<\/ul>\n<h2>Modo de fazer<\/h2>\n<p>1. <strong>Infus\u00e3o:<\/strong> aque\u00e7a o leite com a pimenta e a canela em fogo baixo at\u00e9 quase ferver. Desligue, tampe, espere 5 minutos \u2014 o leite &#8220;pega&#8221; o calor da pimenta na medida. Retire a pimenta e a canela.<\/p>\n<p>2. Volte ao fogo baixo, junte o chocolate picado, o a\u00e7\u00facar e o sal, mexendo at\u00e9 dissolver completamente.<\/p>\n<p>3. O toque mexicano: bata com um fouet (ou mixer) por 30 segundos at\u00e9 espumar \u2014 os astecas batiam at\u00e9 espumar com um batedor de madeira chamado <em>molinillo<\/em>; a espuma era a parte nobre.<\/p>\n<h2>Calibrando o calor<\/h2>\n<p>Meia pimenta em infus\u00e3o = aquecimento gentil que cresce a cada gole. Pimenta inteira com sementes = vers\u00e3o guerreiro asteca.
